Have lots of "sauge sclarée"- salvia sclaria- in my garden- think I can use it to perfume white wine but not sure. Anyone know or used it for anything else?

It does add an "interesting" flavor to wine and beer. Not to my liking but others find it perfect with alcoholic drinks.
