Gourd glut

Despite a month of total neglect whilst I was on holiday my gourds have cooperated this year and now have a number of fruit on them. One variety, Mesa Queen, has several fruit which look ripe, and are now bigger than seems usual for that variety - at least 6" long. Can I assume they're ripe, cut & store them and hope the plant produces more fruits, or do they have to be left on the plant for longer?

I have heard that one should leave these things on the plant until it dies; its a bit late to make more fruit now anyway. I have a number of Turks Turbans out there which I shall eat; are yours edible?
