Borlotti beans

| Seduced by seed packets again! Now I have them what's the best way to cook them? As green beans, fresh shell beans or dried beans - what's your experience? I've only had them as dried beans before I grew them myself. |

| In Italy they're often eaten as fresh beans - use the fresh beans as dried. Never as green beans! |

| Thanks. they are looking very decorative at present so I think I'll pick them for dried beans later. |

| Dried borlotti beans are very popular in Italy in thick winter soups and pastas. Soak them overnight in water and then cook them the next day with lots of garlic and onion. You can also add chopped tomatoes, bacon and parsley for added flavour. If you want them in a pasta sauce, cook them as for the soup, then crush or blend half of them and keep the other half as chunky bits. Cook the pasta separately, drain and add to the beans.
